Lotsa Potato Salad


90 boiled eggs.

That's what I boiled the night before the great potato salad mix-up. Three gals from the church and I prepped potatoes, eggs, pickles and celery, then got together to mix and bag up a huge amount of potatoe salad for our women's conference the next day.

Beside the 90 eggs (long live food processors!) we had 55 pounds of potatoes, 4 large jars of baby dill pickles, only 25 stalks of celery, 5 quarts of Best Foods mayo and about 2 cups of pickle juice. Food service gloves and lots of big mixing bowls were a must! It was a crazy adventure.

I have to say that I have begged Spring to teach me how she makes potato salad for years, and now I really know! We all had such a good time working on it together. Such a good memory maker!

As you can see, our plates were nice looking and the servers were our high counsel members.
